Easy barbecue recipes

Next time you fire up the grill, try these marinated tiger prawns or burgers with home-made dressing.

Marinated tiger prawns


Large tiger prawns, no shell

Marinade (enough for 40 prawns)

5-8 cloves of garlic, chopped

3 tablespoons of sambal olek (chilli sauce)

2 tablespoons of fish sauce

juice from a lime

4 tablespoons of olive oil

1 teaspoons of salt

teaspoons of pepper

In the kitchen

Marinate the tiger prawns for one hour.

By the barbecue

Barbecue the tiger prawns directly on the griddle or in the grill basket for two to three minutes on each side, until they change colour.

Easy burgers with home-made dressing

Serves 4


600g of minced meat

4 slices of cheddar cheese

4 rashes of turkey bacon

4 bread rolls

1 red onion

2 tomatoes

1 head romaine lettuce

300g (small jar) of light mayonnaise

125g of pickles

a bit of cayenne pepper

In the kitchen

Part the minced meat into four even shares and form into patties, approximately 1cm tall. Half the rashes of turkey bacon and place them on top of the patties.

For the dressing, blend the light mayonnaise with the cut pickles and season with a bit of cayenne pepper.

By the barbecue

Prepare your barbecue for the 50/50 barbecuing method. If you are using a kettle barbecue, place all the charcoals on one side of the griddle. On your gas barbecue, only turn on the burners on one side.

Prepare the cooking griddle with cooking oil, then barbecue the patties on direct heat for approximately two minutes on each side, until they have been on for eight to 10 minutes in total. Start with the side that has the turkey bacon on it. When done, move the patties onto the indirect heat. Next, place a slice of cheddar on each patty and heat up your bread rolls on the indirect heat as well.

Prepare the burgers by adding the dressing to the bottom part of the bread roll, then add washed romaine lettuce and the bacon-barbecued patty with cheddar cheese, followed by sliced tomatoes and onions.

Serving suggestions

Serve with chunky cut chips, mayonnaise and smokey barbecue sauce.

Why not try:

US style burgers: Add a smokey barbecue sauce on the beef patties while barbecuing, and add a few onion rings to each burger.

Mexican style burgers: Take away the turkey bacon, and replace it with a few slices of avocado and jalapeños. Add salsa to the bread roll.
