Mozzarella madness at Villa Toscana
Villa Toscana, the Italian restaurant at St Regis Abu Dhabi, holds a sagra (festival) every couple of months highlighting a staple in Tuscan cuisine.
For 10 days, Chef Stefano creates a menu entirely focused on one ingredient, such as truffles, polenta or honey.
From June 20 to 30, the ingredient is mozzarella. Chef Stefano whipped up for The National these two delectable dishes: burrata served with the pappa al pomodoro, black squid ink, focaccia crouton and emulsion of basil pesto; and Sorrentina-style potato gnocchi gratinated in the oven with buffalo mozzarella and fresh basil.
