Guest chef Siraj Khan presents Hyderabadi menu at Ananta, The Oberoi, Dubai

From today until April 18, Siraj Khan of the Trident, Hyderabad, will be in residence at The Oberoi Dubai’s Ananta Indian restaurant. The chef will be presenting an array of authentic Hyderabadi dishes, influenced by Mughlai, Turkish and Arab cuisines, including dum ka murgh – chicken braised in a rich curry of yogurt and nuts; haleem – a “porridge” of slow-cooked lamb, wheat and lentils; and pathar ka gosht – lamb kebabs cooked on a hot stone. Khan will also be preparing his signature dish, kacche gosht ki biryani, a Hyderabadi dish that is considered the ultimate measure of a chef’s skill and, allaegedly, there are only six chefs, or “khansamas”, still alive who can make it.
