Delicious date dessert on menu at Ajman’s new Thanani restaurant during Ramadan

One of Ajman’s newest dining destinations is hoping to make a Ramadan “date” with diners in the emirate and beyond, quite literally.

The chef behind Thanani, Ricardo Menta, has crafted an indulgent dessert that pays tribute to the date.

Traditionally eaten by Muslims throughout the holy month to break their fast, this rich and nutrient-packed fruit with its natural depth and sweet flavour was a natural choice for Thanani’s the sweet element on its iftar menu.

The dessert features a mix of a sticky sponge cake with dates served alongside an innovative pumpkin pannacotta, yogurt ice cream and pumpkin brittle drizzled with a carrot syrup and dried carrots and nested in a bed of crumble.

The dish recreates warm, hearty and comforting flavours reminiscent of traditional flavours associated with Ramadan.

Chef Ricardo was also keen on incorporating yogurt into the dessert as it is usually served in the form of a refreshing drink alongside the iftar meal.

Thanani’s iftar menu which features a selection of Ramadan dishes — small dishes perfect for sharing and moreish mains straight from Thanani’s lava stone grill — costs Dh125 and includes tea and coffee, dates, a yogurt cooler and a healthy soup.
