Fresh ingredients:

1 punnet cherry or plum tomatoes (approximately 250g)

Dairy products:

1 ball mozzarella

Dry ingredients:

1 small carton passata (you need about 100ml)

1 pack pre-made pizza bases (from the freezer section of the supermarket)

Method:

Place a large, lined, baking tray in the oven and heat to 220°C/fan 200°C/gas 7. Roughly chop the cherry tomatoes.

As soon as the oven is hot enough, slide four pizza bases onto the preheated baking tray.

Heat a couple of tablespoons of olive oil in a saucepan over a medium-high heat. Add the tomatoes and passata, season with salt and black pepper and cook for four to six minutes until the tomatoes are softened. Use the back of a large spoon to crush the tomatoes into a pulpy mass. Taste to check the seasoning and add a little sugar if you think the sauce tastes too acidic.

Tear or slice the mozzarella into pieces.

When the bases are starting to take on a light golden brown colour, remove them from the oven and spread the tomato sauce over the top. Add the mozzarella pieces, return to the oven and continue to cook for 10 minutes or so, until the base is crisp and the cheese is bubbling. Drizzle with a little extra virgin olive oil and serve immediately.
