Fresh ingredients

1 skinless chicken breast

1 small green cabbage

1 carrot

1 apple

1 lemon

1 bunch parsley

Dry ingredients

1 chicken or vegetable stock cube

1 small jar grainy mustard

Method

Make up 250ml stock and bring to the boil. Reduce the heat, season the chicken breast with black pepper and add to the pan. Cover with a lid and simmer for six to eight minutes, or until the chicken is cooked through.

Remove the core and outer leaves from the cabbage and slice into thin strands. Peel the carrot, then slice it. Then slice the apple into thin strips. Pick and finely chop the parsley leaves.

Remove the chicken from the stock and shred.

Tip the yoghurt into a bowl, add a generous teaspoon of mustard, a good squeeze of lemon juice and a teaspoon of honey (if you have it). Season with salt and plenty of black pepper.

Tip the chicken, carrot and apple into a large bowl. Pour over the mustard dressing, add the parsley leaves and mix until well combined. Taste to check the seasoning, adding more mustard, lemon or salt, if you think it is needed.

Divide between two bowls and serve.
